Cicerchia
Cicerchie are a typical legume of the Basilicata Region, they belong to the legume family, they are very rich in protein and useful for the heart, teeth, bones and muscles.
Soaking
Rinse the grass peas under running water and soak them in cold water for about 8 hours with a pinch of bicarbonate
Baking
After the soaking time, remove the water and rinse them quickly, then place them in a saucepan with cold water and bring to the heat.
Cook for about 90 minutes (half time for those who use a pressure cooker), then drain and cook them to your liking.
