Chickpeas
Also known as the meat of the poor and an integral part of the Mediterranean diet, chickpeas are tasty legumes, extremely versatile in the kitchen and rich in protein.
Soaking
Rinse the chickpeas under running water and soak them in cold water for about 8 hours with a pinch of bicarbonate
Baking
After the soaking time, remove the water and rinse them quickly, then place them in a saucepan with cold water and bring to the heat.
Cook for about 90 minutes (half time for those who use a pressure cooker), then drain and cook them to your liking.
