Red chickpea
The red chickpea is an ancient variety of chickpea revived after decades in which cultivation was lost because it was mistakenly considered a less valuable variety than the classic variety of white chickpea.
Soaking
Rinse the chickpeas under running water and soak them in cold water for about 24 hours with a pinch of bicarbonate
Baking
After the soaking time, remove the water and rinse them quickly, then place them in a saucepan with cold water and bring to the heat.
Cook for about 120 minutes (half time for those who use a pressure cooker), then drain and cook them to your liking.
