Black chickpea
Black chickpeas are an ancient variety of legumes, typical of the Mediterranean, which are an important source of nutrients.
Soaking
Rinse the chickpeas under running water and soak them in cold water for about 24 hours with a pinch of bicarbonate
Baking
After the soaking time, remove the water and rinse them quickly, then place them in a saucepan with cold water and bring to the heat.
Cook for about 120 minutes (half time for those who use a pressure cooker), then drain and cook them to your liking.
