DESCRIPTION
The Canestrato di Moliterno, on the other hand, is produced in the upper Agri valley and has a characteristic spicy flavor and an intense yellow color.
Also in Basilicata, as in all the interior regions of the Southern Apennines, there is an ancient tradition in the production of Caciocavallo Podolico Lucano, an exceptional cheese that takes on an increasingly aromatic flavor with the passage of the period of refining.
Canestrato di Moliterno, typical IGP cheese from the province of Potenza aged in caves for 6 months, takes its name from the rush baskets (or fuscelle) in which the curd of sheep’s milk is pressed, broken into pieces after a few minutes of rest .
